YUMMALICIOUS Peanut Butter Chocolate Chip Shortbread Cookies

haha say that 5 times fast!!!

OK..so...I can only eat maybe 2 of these...and then more after a rinse haha.  Good ol' shortbread huh?

These are AMAZING!!!

ok..take your butter out.  1 stick = 1/2 cup at room temperature

PS...best part about this recipe...NO EGGS so taste test the dough all you want:-)

Recipe:

Wet:

1 stick, (1/2 cup) unsalted butter, room temp 
1/3 cup creamy peanut butter1/2 tsp vanilla extract


Dry:

1 1/4 cup all purpose flour 
1/4 cup confectioner's sugar aka powdered sugarabout 1/2 tsp sea salt
3/4 cup of chocolate chips


Break out your mixer with paddle attachment (if you don't have a mixer grab a wooden spoon and medium bowl).

Put your butter and peanut butter in the bowl and cream together.  Once creamed, stir in the vanilla.

In a separate bowl, pour in your flour, confectioner's sugar (aka powdered sugar) and sea salt.  Sift them or grab a whisk and whisk them together (whisk = lazy woman's whisk or what i use because i don't have a sifter and it's just easier hahaha).

Now slowly stir in your dry flour mix into your peanut butter mixture until a dough is formed.  Then stir in your chocolate chips.

Grab some wax paper or parchment paper and work your dough into a roll (like the tube dough you can buy at the market).  Roll your paper over your dough and roll into a smoother and tight shape.

Twist the ends of your paper and throw into the fridge for 1 1/2 to 2 hours (seriously don't pull it out earlier...the tighter, stiffer the dough is, the easier it will be to slice).


Done waiting???


Pre-heat your oven to 325 degrees F.

Put a sheet of parchment on your baking sheet and slice your dough into a little less than 1 inch slices.

Set your timer to 6 minutes and flip your pan then add 7 minutes.

They will not look cooked but they are...trust me...DO NOT PUT THEM IN LONGER FOR MORE TIME!!!

Let them cool and then CONSUME AWAY!!!


The best part about these cookies is the dough...you can make them all or just a few and then pop the dough back into the refrigerator and slice some up later on!
